Ingredients for 4 people

  • 500 gr of green tagliatelle n ° 3
  • 600 gr of wild boar pulp
  • ½ onion
  • 4 tablespoons of extra virgin olive oil
  • 1 dl of white wine
  • juniper
  • grated pecorino
  • 750 cl of tomato sauce
  • a sprig of rosemary

Preparation

Brown the onion and the boar pulp cut into small pieces in oil, then add the wine and let it evaporate, add the juniper berries and the tomato sauce and cook for about 50 minutes over medium heat. Boil the tagliatelle in abundant salted water and season with the sauce and grated pecorino. Serve hot.
